Deep Dish Chicken Pie

I have been cooking for most of my life. My Mother tells a story of a time when my Father's Father was visiting and I was preparing one meal after another, and he finally took her aside and asked if I did all the cooking.

Hardly. My Mom is a great cook and I learned a lot from her because she was willing to let a little kid have the run of the kitchen and learn how to cook by trial and error.

But for many years I have not really done as much experimenting as I once did. So when faced with a weekend without work, and a friend coming over for dinner, I decided it was time to step it up a tad. Friend loves what she calls 'comfort food.' What could be more comforting than a nice individual deep dish chicken pie? I'd never made such a thing before and my experience with these meat pies is mostly limited to the little frozen monstrosities you can buy for cheap.

Let me tell you, these little pies were scrumptiously delicious!
